carrot tzimmes



These sweet carrots, which resemble small coins, express the hope for a prosperous year.






Ingredients:


1 1/2 pounds carrots
1/2 c water
1 1/2 T lemon juice
1/2 t salt
2 T butter
1 T cornstarch
1/2 c orange juice
3 T honey
3/4 t powdered sugar
1/3 c yellow raisins or chopped dried apricots (optional)


Directions:

Scrape carrots and slice in 1/4 inch rounds. Place in a heavy saucepan with water, lemon juice, salt, and butter. Cover tightly and simmer until carrots are just tender, about 12 to 15 minutes.

Meanwhile, blend cornstarch with orange juice, honey and ginger.

Remove carrots from liquid with slotted spoon. Stir orange juice mixture into carrot water and cook until thickened, stirring constantly. Return carrots to sauce, add raisins or apricots, and serve. (Serves 8)
