This is probably the most versatile dish from the entire list: You can serve it as a snack with chips. You can serve it as a baked potato topping. You can warm it up and serve it with rice. Anyway you serve it it's delicious!






Ingredients:


1 jar of chunky salsa

1/2 tsp. cumin

1 tsp. kosher salt

1 can black beans, rinsed and drained

1 can black eyed peas, or kidney beans, or white beans

1 small red onion, finely chopped

1 can corn (drained)

1 c. cherry tomatoes, quartered

2 orange bell peppers, chopped


Garnish:


3 tbsp. chopped fresh cilantro

1 avocado, chopped


Directions:

Rinse and drain beans--this is very important to do every time you use canned beans. Beans have a very toxic protein that needs to be rinsed away, so please never use beans right out of the can. (Dried beans need to be soaked for 10 hours drained and soaked again for another 10 hours, too!)


Empty all the ingredients into a medium sized mixing bowl (or pan if serving warm) and mix well.


If you choose to have it cold, serve it with chips.

If you choose to serve it warm, serve it on a baked potato or with rice.
