hamantaschen Filling: Date-Orange



This is a great filling recipe for our Purim Hamantaschen Cookies. Filling can be made 3 days ahead. Cover and chill. Use about a tablespoon for a 3-4" cookie round. I use a drinking glass (around 3-4") as my cookie cutter.






Ingredients:


1 cup dates (about 8 oz.), pitted, quartered
1 teaspoon finely grated orange zest
1 teaspoon ground cinnamon
½ teaspoon kosher salt
1 tablespoon unsalted butter

1½ c water


Directions:


Bring dates, orange zest, cinnamon, salt, and 1 1/2 cups water to a boil in a small saucepan. Reduce heat and simmer, stirring often and mashing with a heatproof spatula, until dates are very soft and jammy, about 5 minutes. Add butter and stir until melted. Let cool.
