stuffed grape leaves



This is a cultural favorite at every celebration. Grape leaves can be a little hard to find, QFC and Kroger stores are a good bet. I've found that if you talk to a manager, they are usually happy to order it for you.






Ingredients


1# lean meat (lamb, veal, or very lean ground beef)
1 medium onion
Garlic, salt & pepper to taste
2c rice
¼c lemon juice
1 jar (28 oz) tomato sauce

—Or—

1 can diced tomatoes and 1 can of tomato sauce

Directions


Remove leaves from jar and soak in fresh water for 10 minutes to neutralize, rinse and clean. Brown the meat and onions. Add a little less than ½ of the tomato sauce, garlic, pepper and salt. Combine even proportions of rice and meat mixture.

Remove protruding bottom stem from leaf and place veined side up. Place a tablespoon of mixture on leaf. Wrap top third of leaf over meat, fold over both the sides and roll into cigar shaped rolls. Combine lemon juice and remaining tomato sauce pour over casserole.


Place in a 350° oven for 1 hour.
