This is another cultural favorite at every celebration. It is so delicious and satisfying. Enjoy!






Ingredients


1 pkg (about 1½ - 2c) cracked wheat
¼c lemon juice
¼c oil
salt
pepper
1 bunch, green onions
2 cloves, garlic
2 medium, tomatoes
1 seeded cucumbers
1 bunch, parsley
Mint leaves, to your taste


Directions:

Please do not substitute dried or canned whenever fresh ingredients can be used. Soak cracked wheat in 3 cups of warmed water for a minimum of 2 hours. The longer this is soaked (up to 3 hours) the better and more satisfying the salad is.


Mince the garlic, onions, tomatoes, cucumber, parsley and mint. Add equal amounts (¼ cup) of oil and lemon juice. Drain the cracked wheat and combine this mixture with fresh ingredients. Salt and pepper to taste. This salad lasts up to 3 days if refrigerated, just add more lemon juice for taste.
